Open Chicken Rice Cake Sandwiches

These are a yummy, quick sandwich that can be used as a snack or even a meal if you eat several of them. When I made them the chicken was still hot, but you can also make it with cold chicken.

Ingredients:

  • Chicken Breast
  • Rice Cakes
  • Mustard
  • Cottage Cheese

Directions:

Cook your chicken however you like it. You can bake it, grill it, fry it. I cooked mine stove top. A little bit of olive oil into a flat pan, chicken at room-temperature on top of that, then spice your chicken. I did salt, pepper, marjoram, and paprika. Again, you can spice your chicken with whatever spices you like. You can also use leftover chicken. Once the chicken was cooked I let it rest as long as it cooked, keeping the meat juicy.

Take your rice cake and spread the mustard on it.

Next, add a dollop of dry cottage cheese and spread that as well. You can also do the cottage cheese first then the mustard if that’s easier.

Finally, slice your chicken breast and add it on top.

Done and done! A simple, healthy meal that gives great flavor and can be enjoyed any time of the day. For a snack eat 2 and for a whole meal you can have 4.
